Winemaker François-Xavier Barc crafts this limited production from an organically certified 2ha vineyard of Chenin Blanc situated on the edge of a valley where the temperature is moderated by cool oceanic influences. The soil is dominated by limestone which helps to add salinity and minerality to the wine’s fruity roundness.
After manual harvest, vinification takes place in large oak foudres where the juice is left on the lees with occasional stirring. It is then transferred to old oak barrels where it’s aged for a minimum of 6 months before bottling. The neutral barrels impart no oak flavor, but instead help to increase concentration.
With its pale color comes an intense nose full of floral and citrus cents. The taste reflects this - grapefruit and lemon flow over a briny saline undercurrent. A lingering acidity and minerality on the finish reinforce its easy drinking yet zesty nature and gently encourages yet another sip.
