Lie: 100% from the grape Melon Blanc (otherwise known as Melon de Borgogne , grown on the granitic and schist soils of the Nantes region. The wine is fermented and aged on the lees (sur lie), a technique that imparts delicacy, minerality, and a subtle, fresh salinity.
On the nose, expect a refined bouquet with citrus, light floral and possibly exotic-fruit notes; on the palate, it should deliver crisp acidity, a clean, balanced body, and a long, refreshing finish — ideal with seafood, shellfish or light fish dishes.
Currently heading the winery at Vignoble Gilbert Chon are Marine Chon and her partner Arnaud Madec-Chon — they took over day-to-day operations in 2022, representing the 13th generation at the domaine.
