Maison Arnaud Boué
Arnaud Boué is a young négociant-turned-estate producer based in Villars-Fontaine, in Burgundy's Hautes-Côtes de Nuits. Arnaud didn't come from a winemaking family, but after earning a degree in enology he spent roughly a decade honing his craft abroad and at home, working at Château Gazin in Bordeaux, as well as producers in South Africa and New Zealand, before returning to his native Burgundy for stints at Domaine David Duband and Domaine des Lambrays.
In 2018, he rented a small place in the Hautes-Côtes and began his own project, making 5,000 bottles the first year, a number that grew to 20,000 bottles by 2022. Along the way he acquired seven hectares of his own vines near Villars-Fontaine, plus a small parcel in Nuits-Saint-Georges, while also sourcing fruit from a network of like-minded, often organic-certified growers. In early 2025, the estate nearly doubled in size with the acquisition of 7.56 hectares of new plots in the Hautes-Côtes de Nuits, land Boué had been seeking out since he first purchased the estate.
The wines span everyday Bourgogne bottlings up through village and premium cuvées, with a particular focus on the Hautes-Côtes and other lesser-known appellations. Boué favors a restrained, less-ripe style, working the vines with sustainable and biodynamic-leaning practices, hand-harvesting the grapes, and letting each parcel and cuvée mature independently so the terroir can speak for itself.
